The Serapias Passito di Pantelleria DOC Mandrarossa is a fortified wine made from 100% Zibibbo (Moscato d'Alessandria) grapes, grown on bush vines in the island's volcanic soils. Harvested in late August, the grapes undergo natural drying in the sun for 20-22 days, then ferment with indigenous yeasts at 16-18°C. Aged for 10 months in stainless steel and 3 months in the bottle, it offers a deep golden yellow color with amber reflections and enveloping aromas of candied citrus, roses, jasmine, and raisins.
On the palate, it is full-bodied, rounded, and sweet, with a pronounced volcanic minerality and a long finish of dates and dried figs. Perfect with almond desserts, ricotta, or spicy cheeses; serve at 14°C. Presented in an elegant case, it's an ideal gift to celebrate the uniqueness of Pantelleria.
